Smooth, delicious, chocolatey treat

It's no secret I am a recovering sugar addict. I spent most of my life planning my meals around what was for dessert. Not proud of it, but it's true! Over the past 15 years, as I have built my health business I learned a lot more about high and low glycemic foods, and most importantly how high glycemic foods impact your health. So...the search was on for delicious alternatives that I can enjoy and share with others! Here's a favourite recipe of mine that will satisfy the sweetest sweet tooth as well as your desire to treat your body the way it deserves to be treated. Chocolate mousse made with tofu is one of my absolute favourites! There are lots of recipes on line -- this is my adaptation and the one I consistently get the best results with.


Silken Chocolate Mousse


Ingredients:

1 package (12 oz) extra firm silken chocolate mousse

1 cup semi sweet chocolate, or equivalent dark chocolate, broken into pieces

3/4 cup almond or cashew milk

1 tsp vanilla extract

pinch of sea salt

2-3 Tbs maple syrup


Directions:

Place tofu, vanilla, salt and maple syrup in blender. Put chocolate & nut milk in heat-proof glass dish and place over gently boiling water; stir until melted & completely smooth. Add to blender & blend thoroughly. You may need to scrape down the sides with a rubber spatula a few times to get it fully blended. Pour into individual bowls if desired. Chill 2-3 hours until firm. Serve with a few berries, perhaps a bit of grated dark chocolate or even chocolate spoons I found at the dollar store (they are probably not the 'healthy version, but hey, I was trying to impress guests;)

It's hard to believe this is as good for you as it is delicious!
